Our Process
Dedicated to the art of the cranberry
Citadelle is proud to be the first whole cranberry processor in the world to create a hand-crafted drying process that leaves every berry moist and plump. Our patented process dries the fruit at lower temperatures for longer— extracting only a small amount of juice for a berry that’s always tender, tangy and bursting with healthy benefits. Our 55,000-sq.ft. facility is capable of processing millions of pounds of cranberries every year, transforming fresh berries into whole dried, sweetened cranberries.
Made with passion, love and care
Our secret is the hard work and dedication of our producers. Over the years, we’ve reinvented the art of the cranberry, one step at a time. Backed by nearly 100 years of know-how, our cooperative has built a solid reputation for its expertise, precision, innovation, and quality.
Expertise
Our farmers benefit from the expertise of agronomists throughout the entire production process. From the field to store shelves, our experts are on hand to ensure that the berries we produce meet Citadelle’s most stringent standards.
Precision
Our cranberries are only harvested once they are fully ripe. This guarantees the berries we offer are beautifully round and tasty. They’re then quickly frozen to preserve their qualities all year long.
Innovation
The secret to our cranberries tasting so fresh? Our innovative low-temperature drying process. That helps preserve the berry’s integrity and its natural shape, tenderness, and bright red hue. Combined with an optimal infusion, our cranberries can’t help but be the best on the market!
Quality
Each cranberry we harvest is thoroughly inspected for quality. Moreover, our cutting-edge drying technique ensures only a small amount of juice is extracted during the process, guaranteeing the integrity of the fruit and preserving its myriad health benefits.
It all starts in the fields
Our agronomist supports producers throughout the year to advise them and guide them to the best resources. Their work begins in the winter when the fields are completely frozen. They analyze data from previous harvests and make the best recommendations to help producers obtain superior quality cranberries year after year. During the spring and summer, our agronomist will travel on site to analyze the producer’s crops and suggest improvements as needed.
